Vietnam, the second-largest coffee exporter globally, boasts a hidden coffee gem waiting to be discovered. Unless you've traveled there or dined in a Vietnamese restaurant, you might not know about its coffee culture. In Vietnam, everything begins with a cup of coffee, and we've even crafted our unique brewing method known as "Phin," originally introduced by the French but now adapted in our own distinctive way. My journey into the world of coffee ignited a newfound passion for creative cocktails. I realized that concocting your own imaginative drinks can be just as addictive as cooking. It's about finding ways to amplify flavors, experimenting with unique combinations, and, yes, making a few delightful mistakes along the way. The process is not only enjoyable but also incredibly creative.



In this class, we'll embark on a journey through the world ofVietnamese coffee.We'll delve into its rich history, its origins, and the fascinating journey from bean to brew. Our adventure begins with a coffee tasting session, where we'll learn to discern different coffee profiles and identify unique notes, much like the art of wine tasting.As we sip, we'll pair our coffee with delightful snacks, discovering how flavors and aromas harmonize. Afterward, we'll shift gears and choose the cocktails we'd like to create, or if you prefer, mocktails are equally welcome.We'll draw upon the skills we've gained to craft our own exquisite mixed drinks, each a masterpiece of flavor.To conclude, we'll bottle our creations, design personalized labels with our names, and take our newfound creations home.

My journey has taken me through Korea, the US, Germany,Albania, and Spain, with visits to over 34 countries.These experiences have reshaped my culinary outlook on an entirely new level.This is why I've created this class, to guide you on a journey of crafting a dish that leaves your unique mark of creativity. Let's prepare a dish that offers the comforting familiarity of home while introducing an unexpected twist that no one could have imagined.


In this class, I will guide you through a mini-sensory journey, allowing you to smell the ingredients we have, taste the seasonings we will use, and participate in a mini wine and coffee tasting to imprint these sensations in your memory. Following this sensory experience, we will proceed to create art together. There’s no recipe, right or wrong, everything is base on feelings. Yet, I will share some fundamental secret of cooking to make sure even if you “fuck-it-up” big time, it still taste amazing, or being able to rescue it. (Well not all the time). Every one of us was born with all of the senses, we need them all so much to survive through human revolution. Without our senses, everything will be so blank and tasteless, yet with our modern days we don’t connect with our senses so much anymore. I believe everyone has a good pallet, just because we can’t detect it it doesn’t mean it's not there. Through out my journey of diving into culinary since kid, I smell everything from the wet market in Vietnam, and that smell embarks me to the journey of creating my own perfume brand Grasse, France. I discover the connection between memories and senses are so incredibly strong, and when it comes to wine tasting or coffee, they all require pretty much the same skills. Senses can build up through experiences or practice, the more you connect to your sense, you will discover that everything around you are way more alive, with deeper meaning than its own blank existence. This class never have been ever created before because no-one out there has connect these three process together, everyone in each field are usually train to be a specific expert in it. Yet, as a student of learner I fortunate to experience all three through my start up journeys and I find it fascinating how we can connect all together.



In this class, we'll embark on a sensory exploration journey, learning to connect deeply with our senses. We'll hone our techniques, using our nose and mouth to detect nuances, and we'll take part in mini-tastings of wine, coffee, olive oils, and perfumes. Through each tasting and sensing experience, you'll jot down your personal notes, capturing what you detect and how these sensations connect to your memories.

Following the tasting and sensing sessions, we'll venture into the world of emotions, savoring a tasting course menu. You'll witness how your senses have evolved to a whole new level. It's truly remarkable as you begin to recognize notes, taste buds, and sensations throughout these experiences.
